Power Muffin Recipe
Using Orgain Organic Protein Powder-Peanut Butter Flavor (You can find it at Costco!)
I finally got my act together to get this recipe out. The original reason for throwing this together was because my good friend was visiting who is gluten and dairy free. I was a little skeptical at first, but she ended up eating on average 3 muffins a day, so I'm guessing it was a hit!
Ingredients:
7 Eggs
1/2 cup liquified coconut oil (just throw it in the microwave for about 30 seconds)
1/2-3/4 cup honey (depending on how sweet you like your muffins. The 1/2 cup version is just mildly sweet which is what I used)
2 tsp vanilla extract
1/4 teaspoon apple cider vinegar
2 cups almond meal
6 tablespoons cornstarch or arrowroot starch
3 tablespoons chia seeds (no need to grind these)
2 tsp baking powder
1 tsp salt
6 scoops Orgain Organic Protein Powder in Peanut Butter Flavor
1/2-1 cup of chocolate chips (depending on how chocolatey you like these)
Directions:
Heat oven to 375 F
In a large bowl, wisk eggs together (about 30 seconds), add remaining wet ingredients and mix
In a medium bowl, wisk together dry ingredients excluding chocolate chips
Slowly add dry ingredients to wet ingredients and mix thoroughly, then add chocolate chips at the end. Let mixture sit for a few minutes to let the apple cider do it's job.
Grease muffin pan or use paper liners and fill with batter 3/4 full.
Bake for 13-18 min (this really depends on your oven)
Eat warm!!
Keep them in the freezer, then to heat this up later, place it on defrost for 30 seconds and then regular temp for about 40 seconds.
